Pork Loin Roast
Talk about easy! This is a no brainer if you have a couple of pounds of pork loin to cook. I selected a half- loin at the grocery store. Then I turned the oven to 350° and put this baby in a large roasting pan, added some rosemary sprigs on top, pepper, and salt, and roasted uncovered until the internal temperature was between 165° and 170°. For this roast it took an hour and 15 minutes. Allow to rest for at least 20 minutes to ensure that it’s tender and juicy when ready to slice
For the sauce, I used drippings from the bottom of the roasting pan, a teaspoon of orange zest, the juice of two oranges, a dash each of ground ginger, ground clove, ground pepper, garlic powder and onion powder. Salt to taste. With a teaspoon of corn starch and about ¼ cup cold water I made a slurry and added it to the sauce pan and stirred until well blended and thickened. Using a strainer I removed the larger bits and poured the smooth sauce over fresh slices of pork. With some potatoes and green beans with pepper and bacon grease, what a meal!
