Lightning Fast Sweet and Sour Meatballs
Here is another super fast appetizer for the holidays. All you do is purchase pre-cooked meatballs from the freezer section and heat in a skillet with three other ingredients. They come in a turkey variety as pictured (from Aldi).
Defrost them overnight in the fridge, toss them in a skillet and add 3/4 cup ketchup, ½ cup apricot preserves and ¼ cup sweet chili sauce for some heat. You may omit the chili sauce and add more ketchup for the heat intolerant. Stir until the preserves are melted and mixed well then simmer for a few minutes until the meatballs are heated through. Let them steep a while to absorb the flavors and serve hot. These would be a perfect appetizer to keep in a buffet warmer or a small crock pot. You could just keep them warm on the stove for informal gatherings. You may need to add water if the sauce is kept in the heat for more than an hour. Sweet sauces have a tendency to scorch quickly so keep an eye on them. Enjoy making this sweet, spicy, and meaty treat. Since they are so quick and easy there is more time to enjoy the party too!
