A Side Dish With Everything
Bake as many medium sweet potatoes as you desire in the microwave on high. I baked 3 for eight minutes. Let them rest and cool. When easy to handle remove the skins and slice the potatoes into 1/2 inch slices. In a non-stick skillet with a whisper of olive oil (and maybe a dot of bacon grease) grill both sides of the potatoes until a bit of brown appears. Remove to a plate immediately and sprinkle with seasoned salt and a pinch of brown sugar. This could go with chicken or pork and a green vegetable or like today it will be lunch. Worth a try!
